Work out the pillar's final height and combine 20 and 30 cm pieces to hit the exact dimension with no cutting.
Cast a level footing and leave reinforcement starter bars on the axis.
Bed the first piece on fresh mortar and check level, plumb and square.
Stack the pieces, threading the reinforcement through the central void, mixing pieces from several pallets to spread out the tone.
Fill the central void with flowing concrete in lifts and check plumb every two courses.
Cap it with the textured dry-stone pillar cap, in 40 × 40 or 50 × 50 cm.

Combining 20 and 30 cm pieces gets you to almost any height with no cutting, and a cut on a natural-stone finish always shows: it leaves a smooth, grey edge that can't be matched to the rest of the pillar.
